MEXICO CITY,MEXICO (SPA) – A culinary tradition of epic proportions is alive and well in Mexico City. The 20th annual Torta Fair, a vibrant celebration of the beloved Mexican sandwich, recently kicked off with a monumental achievement: the creation of a giant torta measuring an incredible 295 feet in length. This colossal creation, which weighed over one ton and was crafted from more than 50 specially chosen ingredients, is a hallmark of an event that has collectively produced a total of 3,782 feet of giant tortas since its inception.

The torta, a hearty Mexican sandwich typically served on a soft roll, is a cornerstone of the country's street food culture. While home recipes are often tailored to personal taste, the gargantuan torta assembled at the fair is a feat of collaborative engineering and culinary artistry. It is not just one sandwich but a mosaic of flavors, each section representing the diverse offerings of the more than 90 national and international vendors who participate in the event.

The core of a torta recipe begins with the bread, usually a fluffy bolillo or a flatter telera roll. These are sliced open and toasted, often with a spread of refried beans or mayonnaise to add a rich, moist base. The fillings, however, are where the true creativity and scale of the Torta Fair come into play. While a standard torta might feature a single protein like milanesa (a fried, breaded cutlet), pierna (roasted pork leg), or carnitas, the mega-torta showcases an astonishing variety. Exhibitors contribute their unique specialties, resulting in a single sandwich that contains everything from traditional ham and cheese to exotic fillings such as wild boar, ostrich meat, and even pre-Hispanic ingredients like insects.

The construction of the giant torta is a timed and coordinated spectacle. Dozens of chefs and volunteers work together to meticulously layer the ingredients in a race against the clock. After the bread is laid out, the process begins: chefs add meats, cheeses, fresh vegetables like lettuce and tomato, and a final flourish of pickled peppers or sauces. The record-breaking torta for the 20th fair was assembled in a remarkable 2 minutes and 16 seconds, according to organizers. Once completed and officially certified by a notary public, the entire sandwich is then distributed to the thousands of attendees, allowing them a literal taste of the fair's collective spirit.

This annual tradition is more than just a gastronomic spectacle. It's a key cultural event that drives tourism and celebrates the diversity of Mexican cuisine. The Torta Fair has evolved into a symbol of community, collaboration, and culinary pride, with the creation of the giant torta serving as a fitting and delicious centerpiece for its twentieth anniversary.
